Smoking & Meat Preservation

A project we hope to undertake in the near future is meat preparation and preservation. Though many families have animals, they usually sell the animal to the butcher and buy a little bit of meat back. They can’t consume all the meat themselves before it would spoil. Most meat is simply cooked on the direct fire and has a definite unpalatable charred flavor. By learning to smoke and preserve the meat, they can use less wood to prepare the meat, and can cure it so that it can be utilized by the family over time. This processed and cured meat also would enable them to sell the meat in the markets at a higher price.
